Marinated Grilled Artichokes with Mayo Dijon Sauce

 

 

This recipe was inspired many years ago when my husband and I lived in Huntington Beach, CA. We used to frequent one of our favorite restaurants in Seal Beach named Walt’s Wharf. We would always go for their “world famous” oak grilled artichokes, buckets of steamer clams and paired it with a nice glass of chardonnay. Their grilled artichokes are so amazing and delicious we had to figure out a way to create our own version.  So after many several attempts, my husband and I are very proud of our version of grilled artichokes and we hope you will enjoy them as well!

 

Marinated Grilled Artichokes with Mayo Dijon Dipping Sauce

Serves: 4

Prep Time: 10-15 minutes

Cooking Time: 15-25 minutes

Marinating Time: 15-20 minutes

Grilling Time: 10 minutes

Ingredients:

4 artichokes

2 tablespoons extra virgin olive oil

2 tablespoons balsamic vinegar

1/2 cup of mayonnaise

1 tablespoon of soy sauce

2 tablespoons of dijon mustard

1/2 teaspoon garlic powder

salt and pepper to taste

Artichokes

Prepare the artichokes by trimming off the stems and any small leaves at the base. Use a large serrated knife to cut in half and clean out the “choke” (the fine furry like threads inside). Place the halved artichokes inside a large stock pot of boiling water and cook for 15-25 minutes until fork tender (times vary depending of the size of the artichokes, longer amount of time is needed for your larger artichokes). Once cooked, remove from boiling water and place on a platter or baking dish, allow to cool.

Once the artichokes are cooled drizzle the extra virgin olive oil, balsamic vinegar and sprinkle the salt and pepper. Allow to marinate for 10-20 minutes.

Marinated artichokes

While the artichokes are marinating combine the mayonnaise, soy sauce, dijon mustard and garlic powder in a small bowl and season with pepper.  Salt is not needed due to the added soy sauce. Store in refrigerator until ready to serve.

Place the halved marinated artichokes on a medium high grill for 5 minute on each side.  Be sure not to leave them on for too long because they will start to fall apart if over cooked.

Serve the grilled artichokes with the Mayo Dijon sauce.

These grilled artichokes are great served as appetizers, along side any main dish or even on their own for a light meal!  They are sure to please!
