Classic Quiche Two Ways

Quiche (/ˈkiːʃ/ KEESH) is a French tart consisting of pastry crust filled with savoury custard and pieces of cheese, meat, seafood or vegetables. 

I love to make quiche when entertaining family or friends for brunch or a light lunch. Quiche is great served warm or at room temperature, paired with a side of fruit or a lightly dressed salad.  You can be creative with your quiche by varying the type of cheese, meats, and or vegetables, the possibilities are limitless when it comes to this savory dish.

Today I’m sharing a basic quiche recipe in two ways.  The first quiche is vegetarian; made with spinach, mushrooms, cherry tomatoes, and green onions.  The second one is made of ham and caramelized shallots. Both of these quiches have the same base ingredients; eggs, heavy cream, white cheddar, and greyer cheese. Once you have the basic ingredients you can mix it up and create your very own signature quiche to impress your family and friends.

Spinach, Mushroom, and Cherry Tomato Quiche

Spinach, Mushroom, and Cherry Tomato Quiche

This is a great vegetarian quiche to make for brunch or a light lunch. Feel free to switch out any of the vegetables to your liking.

Ingredients
  • 1 uncooked refrigerated pie crust at room temperature, I prefer Trader Joe's
  • 2 cups baby spinach
  • 4 ounces sliced mushrooms
  • 1/2 cup cherry tomatoes quartered
  • 3 green onions diced
  • 1 tablespoon butter
  • 6 eggs at room temperature
  • 8 ounces shredded white cheddar cheese (approximately 2 cups)
  • 4 ounces shredded greyer cheese or swiss cheese (approximately 1 cup)
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
Directions
  • Step 1 Preheat oven 350 degrees
  • Step 2 Place the pie crust on an ungreased 9″ dia pie dish.
  • Step 3 Combine both white cheddar and greyer cheeses in a medium bowl, set aside.
  • Step 4 In a medium-sized mixing bowl whisk eggs, heavy cream, salt, and pepper until well incorporated.
  • Step 5 Add butter to a medium-sized sautee pan, add sliced mushrooms and cook on medium heat until just tender.
  • Step 6 Add green onions to mushroom and remove from heat.
  • Step 7 Place uncooked baby spinach at the bottom of the pie crust.
  • Step 8 Sprinkle sauteed mushrooms, green onions, and quarted cherry tomatoes on top.
  • Step 9 Sprinkle 1/2 of the shredded cheese mixture on top of the vegetables.
  • Step 10 Pour eggs over cheese and vegetables.
  • Step 11 Top with remaining shredded cheese.
  • Step 12 Place pie on a baking sheet and bake for 40-45 minutes until golden brown and the center does not jiggle.
  • Step 13 You may serve immediately or you can make ahead up to a week and freeze until ready to serve.
  • Step 14 If you make it ahead, reheat your quiche at a 300 degree preheated oven and bake for 30 minutes.
  • Step 15 Serve alongside fruit or a lightly dressed salad.

 

Ham and Caramelized Shallot Quiche

This quiche is a great way to incorporate any leftover ham you may have after Easter Sunday. It's savory and slightly sweet with the caramelized shallots, perfect for brunch or a light lunch.

Ingredients
  • 1 uncooked refrigerated pie crust at room temperature, I prefer Trader Joe's
  • 1 cup diced cooked ham
  • 2 large shallots sliced
  • 1 tablespoon butter
  • 1 tablespoon sugar
  • 6 eggs at room temperature
  • 8 ounces shredded white cheddar cheese (approximately 2 cups)
  • 4 ounces shredded greyer cheese or swiss cheese (approximately 1 cup)
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Dash of nutmeg
Directions
  • Step 1 Preheat oven 350 degrees
  • Step 2 Place the pie crust on an ungreased 9″ dia pie dish.
  • Step 3 Combine both white cheddar and greyer cheeses in a medium bowl, set aside.
  • Step 4 In a medium-sized mixing bowl whisk eggs, heavy cream, salt, pepper, and nutmeg until well incorporated.
  • Step 5 Add butter to a medium-sized sautee pan, add sliced shallots and sautee on medium heat. Once shallots are translucent add sugar and continue to cook until golden brown, remove from heat.
  • Step 6 Place diced ham in the bottom of the pie crust and sprinkle half of the carmelized shallot mixture on top.
  • Step 7 Sprinkle 1/2 of the shredded cheese mixture on top of the ham and shallots.
  • Step 8 Pour eggs over the ham and cheese.
  • Step 9 Top with remaining shredded cheese and sprinkle remaining shallots.
  • Step 10 Place pie on a baking sheet and bake for 40-45 minutes until golden brown and the center does not jiggle.
  • Step 11 You may serve immediately or you can make ahead up to a week and freeze until ready to serve.
  • Step 12 If you make it ahead, reheat your quiche at a 300 degree preheated oven and bake for 30 minutes.
  • Step 13 Serve alongside fruit or a lightly dressed salad.
