Mom’s Favorite Rocky Road Cake

 

Is it true, or am I dreaming? Today is “National Chocolate Cake Day!” Don’t you find it a bit ironic that someone decided January 27th will be a day we celebrate eating chocolate cake?  Is it because we are 3 weeks into our resolutions and now we want to reward ourselves? Or is it because by the end of January we just say… “what’s the point?” I wonder why they only dedicated 1 day for this? Personally I think it should be every day! I know, I know “a moment on the lips, forever on the hips!” But who’s counting really? Not me… not today!

In honor of this delicious day, I’ve decided to share with you one of my Mother’s favorite chocolate cake recipes. I know there are many versions of Rocky Road Cake, and I’m sure they are all outstanding! However, this one holds a special place in my heart.  When I was a teenager my Mom decided to bake a cake, but it wasn’t just any cake, this was a Rocky Road Cake! Being a chocoholic, my mind was simply blown away to think that my favorite ice cream was now going to be a cake! The combination of chocolate chips, chocolate pudding mixed in with marshmallows, nuts and raisins is just heavenly!

To make this cake even more special, I ran across this recipe in my Grandmother’s old recipe box of which I inherited. My Grandmother titled it “Judy’s favorite cake!” However, my mother did not create this recipe; the original recipe comes from a magazine advertisement from Best Foods Real Mayonnaise. I was unsuccessful in finding it on their website, perhaps because the recipe was printed in the 1980s before they had a website and the internet? Needless to say, I’m bringing back an oldie but goodie and I’m very excited to share it with you!

 

 

 

Rocky Road Cake                         

Serves: 12

Prep Time: 15 minutes

Baking Time: 50 minutes

 

Ingredients:

1 cup chopped walnuts or almonds (optional)

1 cup seedless raisins (optional)

1 cup miniature marshmallows

6 oz semisweet chocolate chips

1 pkg (18 1/2 oz) devil’s food cake mix with pudding (if unable to find a cake mix with the pudding, you may substitute it with 1 15.25 oz pkg of moist devils food cake mix and use 3 oz of instant chocolate pudding mix)

4 eggs

1 cup Best Foods Real Mayonnaise

1 cup water

Confectioners sugar for dusting

 

Preheat oven 350 degrees

Grease and flour 12 cup bundt pan.

In a small bowl combine nuts, raisins, marshmallows, and chocolate chips.

In a large bowl combine cake mix & pudding mix, eggs, Real Mayonnaise, and water mix until combined.  Increase speed on your mixer and beat for 2 minutes. Stir in the nut mixture and pour the batter in prepared pan.

Bake 50 minutes or until a cake tester inserted in center comes out clean.

Cool in pan for 15 minutes. Remove; cool on a rack.

Dust with confectioners sugar.

 

Don’t be surprised if you need to cook the cake longer than the recipe states.  This cake is very moist from the mayonnaise and dense with all of the extra goodies that are added to it.  If you have nut allergies feel free to omit them, it will still taste amazing!
