Old-Fashioned Peanut Butter Cookies

In honor of National Peanut Butter Day, I thought I would share my favorite Old-Fashioned Peanut Butter Cookie recipe with you. These cookies are loaded with a cup of peanut butter and a cup of butter and are so delicious!  There are several variations one can do but I thought I would feature the “good ‘ole fashioned” version for this simple recipe from Southern Livings Ultimate Cookbook. I hope you enjoy it!

 

Old Fashioned Peanut Butter Cookies

Prep Time:  25 minutes

Chill Time: 3 hours

Cook Time:  10-14 minutes

Ingredients:

1 cup unsalted butter softened

1 cup creamy peanut butter

1 cup sugar

1 cup firmly packed brown sugar

2 large eggs

2 1/2 cups all-purpose flour

2 teaspoons baking soda

1/4 teaspoon salt

1 teaspoon vanilla extract

Sugar

 

Preheat oven 375 degrees

Whisk together flour, baking soda, and salt in a medium bowl.

In a large bowl beat butter and peanut butter at medium speed with an electric mixer until creamy; gradually add sugars, beating well.  Continue to beat while adding eggs 1 at a time and vanilla.

Combine the flour mixture 1/2 cup at a time until fully blended. Cover and chill for 3 hours.

Shape into 1 1/4″ balls and place on parchment-lined cookie sheet 3″ apart.  Dip a fork in the additional sugar; flatten cookies in a criss-cross design.

Bake for 10 – 14 minutes or until golden brown.

 

If you would rather not bake the entire batch at one time you can freeze the leftover dough and save it for when you’re craving something sweet later on.

Now grab yourself a glass of milk and enjoy!
