Banana Chocolate Chip Muffins

 

 

I can not believe it’s that time of year again where my kids are back in school! Of course, I’m always so excited about all of the “extra time” I have to accomplish everything I didn’t accomplish during the summer break. I have 4 extra hours of uninterrupted silence, I can do anything and everything, right? Or so I tell myself… and then reality sinks in and it’s time for me to go pick them up from school; one at 2:00 pm and the other at 4:00 pm.

Now that they’re back in school I can’t seem to keep their stomachs satisfied when they come home! It’s like they have these tiny monsters inside of them that scream “FEED ME! FEED ME!” and nothing I give them fills them up! Jeez, what’s a Mom to do with these little people and their bottomless stomachs?

Luckily, I can fall back on my go-to recipe that seems to calm those tiny monsters within. In fact, I believe it’s during this time while they are consuming these tasty treats, they’re calm and quiet.  While they are simply eating these muffins alongside a glass of ice cold milk, it is pure bliss! The smiles and chocolate that remain on their faces is priceless. I’ve considered renaming these muffins “Magical Banana Chocolate Chip Muffins” however, I’m not sure the magic lasts as long as we would hope for.

This is a classic banana bread recipe with added chocolate chips and yogurt which keeps the muffins extra moist. Unfortunately for me, I can never surprise them with this snack because they always recognize the smell as soon as they walk in the door. It brings me great joy knowing that I can create a simple and somewhat healthy treat for them to enjoy after school or anytime for a fun snack!

I’m sure you have all of these ingredients in your pantry right now, and if so….GO MAKE THEM! Even if you don’t have children these muffins are so good with a cup of coffee or tea. Perhaps you’ll feel generous enough to share them with your family, your neighbors or even take them to work.  Our batch of muffins only lasts about 2 days in our home and we don’t share them with our neighbors or our coworkers! 🙂 Sorry, they just never last long enough!

 

Banana Chocolate Chip MuffinsStacked banana muffins

Serves: 14 – 16

Prep Time:  10 minutes

Baking Time: 24-26 minutes

 

Ingredients:

1 2/3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon fine salt

1/2 cup (1 stick) unsalted butter, room temperatureBanana Muffins Ingredients

1 1/4 cups sugar

2 large eggs, room temperature

3 mashed overripe bananas

2 tablespoons plain yogurt

1 teaspoon pure vanilla extract

6 ounces semi-sweet chocolate chips

 

Directions:

Preheat oven to 350 degrees

Line your muffin pans with 16 cupcake liners

In a medium sized bowl whisk together the flour, baking soda, and salt.

In a large sized bowl beat together the butter and sugar until creamed together. Add the eggs to the mixture one at a time until completely blended.  Continue to mix in the bananas, yogurt, and vanilla.

Beat in the flour mixture a spoon full at a time until all ingredients are combined.Banana muffins

Stir in the chocolate chips.

Spoon in batter into the lined muffin tins.

Bake for 24-26 minutes or until the tops are golden brown.

Remove muffins from pan and allow to cool on rack for 5 minutes
