Do you ever have one of those days where you feel like sitting in a restaurant with an ocean view enjoying a light healthy salad while sipping on a nice glass of iced tea or chardonnay? Truthfully, I fantasize about it everyday! Even though we live near several amazing seafood restaurants with this view, there is nothing more rewarding in my opinion than creating restaurant quality meals at home!
This last Friday I had a craving for a Classic Shrimp Louie Salad! I started pulling items out of my fridge and low and behold I had all of the fixings to create this simple salad, including the classic Thousand Island Dressing that is traditionally served with it! Now, there are really no rules here when creating this salad. You can use all of the listed ingredients below or not, the choice is yours. Add more veggies to it or spruce it up even more by adding crab! I love how versital this salad is and how it truly satisfies my need for seafood!
Classic Shrimp Louie Salad
Prep Time: 20 minutes
10-12 large peeled & cooked jumbo shrimp
1/2 head of iceberg lettuce chopped
1 large tomato diced
1/2 cucumber diced
1 avocado diced
2 hardboiled eggs sliced
1/4 of red bell pepper diced
2 tablespoons slivered red onion
6 spears of marinated asparagus
2 lemon wedges
Arrange all ingredients on a large serving platter or bowl
Classic Thousand Island Dressing
Serving: 3/4 cup
Prep Time: 5 minutes
1/2 cup mayonnaise
2 tablespoons of ketchup
2 tablespoons of sweet pickle relish (or dill pickles diced)
2 teaspoons of minced shallots
1 garlic clove minced
1/8 teaspoon salt
fresh cracked pepper
Combine the above ingredients in a small bowl, drizzle it over your salad with fresh squeezed lemon and enjoy!
