Easy Crockpot Pork Chili Verde

 

My first recipe I want to share with you is beyond simple and yet extremely flavorful!  This recipe was inspired by the many wonderful Mexican restaurants we used to frequent when we lived in Southern California. Currently where we reside in South Florida, it is very difficult to find authentic Mexican food.  Luckily for us, I’ve created this simple yet comforting dish that is guaranteed to please, especially if you do not have a lot of time to prepare for the weeknight suppers!

Easy Crockpot Pork Chili Verde

Serves:  4

Prep Time:  10 Minutes

Crockpot Cooking Time:  4-6 hours on low

Ingredients:

1 lb of pork tenderloin cubed (or a whole pork shoulder and shredded once cooked)

2 tablespoons of cornstarch

1 Jar of Salsa Verde (my favorite is Trader Joe’s)

1/2 can of diced tomatoes

1/2 medium yellow onion

2 cloves of garlic minced

1 tablespoon of cumin

1 teaspoon of dried oregano

salt and pepper to taste

Garnish with fresh cilantro

Chili verde ingredients

Place the diced pork tenderloin in the crockpot and toss with the cornstarch, making sure all the pieces are covered. Add the rest of the ingredients to the crockpot, stir and set your crockpot to low and let cook for 4-6 hours.

Serve with Spanish Rice, Refried Beans and tortillas.
